A unique cuisine influenced by the surrounding region. A mix created by ancient hands, dictated by everyday life combined with the desire to invent, which has produced dishes that have become an art. These traditions have been studied and handed down with due respect. All this makes up a mosaic of Italian cuisine. The villages of the Central Apennine offer the gourmet traveller a crescendo of tastes and smells that once discovered (and rediscovered) remain imprinted in memories that will last forever. Many foods and drinks have a singular name in each valley, ridge or village, every river, stream or brook in the countryside, up to the mountain peaks, all these dishes await the traveller to be discovered and the local people await new friends to be made. It is only possible to truly flavour these products in their place of origin, they are proposed everyday as well as in dedicated events. This essence remains alive through the local production of a cuisine that has continued to conquer the world without losing the dedication to detail.
